My Favorite Coffee-Rubbed Chicken Thighs

A bunch of years ago, I was shared a recipe for this insanely good coffee rub that was amazing on chicken thighs. It’s the easiest and most delicious recipe to make for a crowd or to enjoy leftovers.

ingredients

  • 6 - 8 boneless, skinless chicken thighs

  • extra virgin olive oil for drizzling

  • Coffee Rub

  • 3 tbsp Paprika

  • 1 tbsp Brown Sugar

  • 1 tbsp Oregano

  • 1 tbsp Ground Coffee

  • 1.25 tsp Salt

  • 1 tsp Pepper

    *Red Chili Flakes optional, to taste


  • Pat the chicken thighs with a paper towel to dry them a bit.

  • Combine all the ingredients for the coffee rub in a bowl and set aside.

  • Sprinkle liberally with the rub and coat/pat into the thigh. Leave a little of the rub to the side for later. Ideally, let marinade for a minimum of 30min.

  • Preheat oven 400℉.

  • Line a baking sheet with parchment or foil.

  • Place the chicken thighs on baking sheet and drizzle with a little olive oil. Just eyeball it. Sprinkle with half of the leftover coffee rub.

  • Flip over chicken thighs drizzle them with more oil and sprinkle with the remainder of the seasoning.

  • Roast in the oven for 25-30 minutes until nice and brown and internal temp reaches 165. I usually roast closer to 30 minutes.

  • When you remove them from the oven, they will look very dark. Don't worry about the color, they will be delicious. Baste them with the juices from the pan.
